Recipe 2017.06.10 - Chinese-Style Fried Chicken

Just to be clear - by Chinese style, I meant Chinese takeaway.

Ingredients:

  • 10 whole chicken wings
  • 1/8 teaspoon black pepper
  • ¼ teaspoon white pepper
  • ¼ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sesame oil
  • 1 egg
  • 1 tablespoon cornstarch
  • 2 tablespoons flour


Put chicken wings in a zip-lock bag. Combine ingredients thoroughly in a mixing bowl. Pour mixture into the zip-lock bag. Marinate overnight in the fridge.

Wings should be at room temperature prior to frying. Make sure the wings are evenly coated. If the batter is too runny, add more cornstarch and flour.

Fry the wings at medium/high heat for 5 minutes, then let them rest on paper towels. Fry again for 3 minutes, then serve.
